1/4  cup olive oil

2  tablespoons apple juice

1  teaspoon salt

1  teaspoon ground cinnamon

4  Cornish game hens

preparation

step 1.

In a small bowl, combine apple juice, cinnamon and salt. Add oil, whisking constantly, in a slow steady stream until fully incorporated. While roasting, evenly brush oil over stuffed bird every 15 to 20 minutes until done.

Preheat oven to 375°.

step 3.

Trim birds of any excess fat.

step 4.

Fill the cavity with 1 cup of stuffing.

step 5.

Using a 6 to 8-inch piece of kitchen string, crisscross the back legs and tie together to shut cavity.

step 6.

Evenly space birds on a baking rack positioned inside a roasting pan. Brush birds with infused oil and place in the oven. Continue to baste birds with infused oil every 15 to 20 minutes. When a meat thermometer inserted into the thickest part of the bird reads 165°, 45 to 60 minutes. Remove from oven, let cool 5 minutes then serve.
