2  tablespoons unsalted butter

2  apples, cored and cubed, divided

2  cups old-fashioned oats

1/4  teaspoon salt

1/4  teaspoon ground cinnamon

1/8  teaspoon ground nutmeg

3  cups whole milk

1  (15 oz) can pumpkin purée

4  teaspoons grated fresh ginger (optional)

1/4  cup raisins

1/4  cup chopped walnuts

2  tablespoons maple syrup

preparation

step 1.

In a 3-qt saucepan, heat up the unsalted butter over medium heat. Add 1 cup cubed apples to the saucepan; cook for 3 to 5 minutes or until the apples are lightly caramelized; stir occasionally.

step 2.

Add the old-fashioned oats, salt, ground cinnamon, and ground nutmeg; stir to combine. Add the whole milk; bring the saucepan to a boil over high heat. Lower the stovetop to low heat and allow it to simmer for 7 to 9 minutes covered or until the oats are fully cooked.

step 3.

Stir in the pure pumpkin purée. Cover and allow it to simmer for 2 to 3 minutes.

step 4.

To serve, stir in the minced ginger; top with the raisins, walnuts, and remaining cubed apples; drizzle with maple syrup.
