ingredients

1  pound sunchokes, rinsed and scrubbed well, and cut into ½-inch thick slice

2  tablespoons olive oil

1/2  teaspoon salt

2  sprigs fresh thyme, picked over

   Ground black pepper

preparation

step 1.

Preheat oven to 400°F with a rack in the center position.

step 2.

In a large bowl, combine sunchokes, oil, thyme, salt, and pepper until evenly coated. Transfer to a baking sheet cut side down and bake for 15 minutes.

step 3.

Remove from the oven. Flip sunchoke pieces over. Bake for another 10-15 minutes or until sun chokes are golden brown in color.
