2  romaine lettuces, chopped

1  cucumber, quartered lengthwise and cut into ¼-inch pieces

1  (10 oz) package cherry tomatoes, halved

1  (15.5 oz) can canned chickpeas, drained and rinsed

4  ounces crumbled feta cheese

1/2  cup black olives, halved

1/2  cup walnut pieces

1  shallot, sliced

preparation

step 1.

In a large mixing bowl combine lettuce, tomato, cucumber, olives, shallot, and chickpeas. Fold gently to combine, top with walnuts and feta. Reserve any remaining mix in air-tight container in refrigerator, up to 3 days.
