Cut the chicken breasts into 1-inch chunks. Set aside.

Place the flour in a shallow bowl. In another shallow bowl, beat the eggs. In a third shallow bowl, place the crushed corn flakes.

Dredge each chicken piece in the flour, then dip in the beaten eggs, and finally coat with the crushed corn flakes. Set the coated chicken pieces aside on a plate.

In a small bowl, whisk together the chicken broth, hoisin sauce, rice vinegar, soy sauce, brown sugar, and cornstarch until smooth. Set aside.

Heat a large skillet or wok over medium-high heat. Add the coated chicken pieces in a single layer and cook until golden brown and crispy, about 3-4 minutes per side. Work in batches if needed to avoid overcrowding the pan.

Once all the chicken is cooked, return it to the skillet or wok. Pour the sauce over the chicken and stir to coat. Simmer for 2-3 minutes until the sauce thickens and the chicken is heated through.

Serve the Lighter General Tso's Chicken hot, garnished with sliced green onions if desired. Enjoy over steamed rice or with your favorite vegetable side dish.
