2  tablespoons unsalted butter, divided

8  ounces andouille sausage, diced

1  cup chopped yellow onions

1  cup chopped red peppers

1  cup chopped green sweet peppers

8  large eggs

2  teaspoons Creole seasoning

1/2  cup shredded cheddar cheese

preparation

step 1.

Heat 1 tablespoon of butter to a skillet over medium heat. Add sausage and vegetable mixture to the skillet. Allow for the sausage to heat up and for the vegetables to soften. This should take about 5 minutes. Set sausage and vegetables aside.

step 2.

In a bowl, whisk together eggs and Creole seasoning.

step 3.

Melt the remaining 1 tablespoon of butter in a skillet over medium heat. Pour egg mixture into pan and reduce the heat. While eggs are about halfway cooked, add cheese into the pan along with the sausage and vegetables that were set aside and work into the eggs until the cheese melts.
