2 (15.5 oz) cans  canned black beans, drained and rinsed

1 (16 oz) jar  salsa

½ teaspoon  salt

8  corn tortillas

4  eggs

¼ cup  Cotija cheese

2  avocados, sliced

¼ cup  chopped cilantro

preparation

Step 1.

Preheat oven to 350°F (175°C).

Step 2.

In a medium bowl, combine black beans, salsa, and salt.

Step 3.

Spread the mixture evenly in a baking dish.

Step 4.

Bake for 10 minutes.

Step 5.

Meanwhile, heat the tortillas over stovetop open flame or in a dry skillet until lightly charred.

Step 6.

Once the black bean mixture is done, create 4 indentations and crack an egg into each one.

Step 7.

Bake for an additional 10-15 minutes, or until the eggs are cooked to your liking.

Step 8.

Remove from oven and let cool for a few minutes. Serve with the tortillas, topping each portion with cheese, sliced avocado, and chopped cilantro.
