Step 1. Beat the eggs into egg wash. Add the Creole seasoning to the egg wash and mix well.
Step 2. Over medium heat, heat cooking oil in a 10.25-inch cast iron skillet. Add the garlic and cook for 30 seconds. Add the pepper, asparagus, mushroom, and another portion of Creole seasoning. Cook for 5-10 minutes or until tender.
Step 3. Spread out the vegetables evenly over the skillet. Pour the egg wash over the vegetables. Do not stir. Quickly top with tomatoes with cut side up and followed by goat cheese. Allow the skillet to continue to cook over the stovetop for 2-3 minutes or until the edge of the frittata starts to set.
Step 4. Transfer the skillet into the oven. Set the broiler to High. Broil for another 3-5 minutes or until the frittata is fully set and lightly browned.
Step 5. Sprinkle with black pepper. Serve while it is hot.
